(Jennifers tårta hade bland annat hallonmousse i och swiss buttercream på, och hon har dekorerat helt utan min inblandning.)
Här kommer receptet på Victorias tårta, som hade två olika nutellafyllningar och marshmallowfondant ovanpå. Det var första gången jag gjorde det, och det var jättelätt, kan verkligen rekommenderas! Inga problem att kavla ut, varken klistrigt eller hårt och väldigt smidigt att forma, och det sprack inte som marsipanlock gör ibland... Kommer definitivt att använda igen. Tack Moma för receptet!
Och chokladmuffinsarna som receptet egentligen är till är supergoda, en ny favorit här hemma. :)
Victorias choklad-nutella monster high tårta med marshmallowfondant
Recept chokladmuffins (1,5 sats till tårtan: 1 mindre form 18 cm och en glas-skål, 175 grader ca 45 minuter)
Sätt ugnen på 175 grader
1 dl kakao
2 dl socker
2 dl mjölk
150 g mjukt smör
2 ägg
3 dl mjöl
1 msk vaniljsocker
1,5 tsk bakpulver
Koka upp kakao och mjölk med hälften av sockret (1 dl) och låt svalna.
Vispa smöret och resten av sockret poröst.
Vispa ner ett ägg i taget, gärna rumsvarmt.
Blanda mjöl, vaniljsocker och bakpulver i en bunke och varva ner det och mjölkblandningen i smörvispet. Jag silade det.
Häll/klicka i smeten i 12 st muffinsformar till max 3/4 av formen. Grädda i ca 18 min.
Använder du silikonformar bör de smörjas och bröas, jag använde kakao och pudrade över.
Recept MMF
300 g marshmallows
2 msk vatten
1 msk matolja
7 - 8 dl florsocker ev mer
Smält marshmallows i micron i en stor plastbunke. Jag brukar köra 10 sekunder, röra om med en plastslev som sedan kan åka med i micron och köra 10 sekunder till, till dess att det smält.
Tillsätt vatten och olja samt eventuell färg.
Strö över all florsocker och rör om tills du får en deg. Konsistensen ska vara som tuggummi, fast inte superkladdigt. MMF-en hårdnar betydligt när den vilat ett par timmar. Det är alltid lättare att tillsätta florsocker efteråt än att arbeta med en hård deg. Även färgen blir betydligt skarpare när degen vilat en stund.

Chocolate Nutella Ganache
3 oz. bittersweet (60-70% chocolate), finely chopped
1/3 cup heavy cream
3 Tbs Nutella
Place chocolate in heatproof bowel. Scald heavy cream in a small saucepan over low heat. Pour cream over chocolate. Whisk until chocolate is thoroughly melted and combined. Mix in Nutella until combined. Chill for about 1 hour at room temperature (or 30 min in the refrigerator) until ganache is thickened but still spreadable.
Swiss Meringue Nutella Buttercream (from Baked In)
4 large egg whites
1¼ cup granulated sugar
3 sticks unsalted butter, at room temperature
½ cup Nutella
Fill a medium saucepan with about 2 inches of water and bring to a simmer over medium heat. Whisk egg whites and sugar together in the bowl of a stand mixer. Rest the mixer bowl over the saucepan, whisking constantly until sugar is completely dissolved and the mixture is thick and glossy (note: to completely pasteurize the egg whites, they must be heated to 140 degrees).
Remove mixer bowl from heat and place on stand mixer. Using the whisk attachment, beat on high speed until cooled and the egg whites hold stiff peaks, about 8 minutes. Switch to the paddle attachment and add the butter two tablespoons at a time. Beat until fluffy and smooth, about 3-5 minutes, or longer if necessary. (It may during this process become a curdled, soupy mess, but just continue beating, and it will come back together.) Add Nutella and beat until fully incorporated.
Assembly
Once completely cooled, remove chocolate cakes from pans. Set first cake on cake stand (or plate, etc) and remove domed top with a serrated knife to even it out and create a flat surface. Spread ganache evely over the surface. Next spread a thin layer of Nutella buttercream over the ganache. Place the second cake on top of the ganache/frosting filling. Apply a crumb coat (thin coat of frosting to pick up all the crumbs so that when you place the second coat, you get a nice even frosting with no crumbs).
Refrigerate for 30 minutes. Apply your final coating of frosting making sure to cover the top and sides completely. You may then pipe on a decorative layer around the edge. If not eating immediately, the cake should be refrigerated. Take out for at least an hour before serving to bring to room temperature.
